One-Pot Creamy Sicilian Gnocchi

Short on time for weeknight dinners?  This very creamy gnocchi has you covered.  It’s so flavorful and comes together in under 20 minutes.  It also requires very minimal clean up since everything is cooked in one pot! Yes you heard correctly – literally all ingredients are thrown in the same pot.  The combination of the sicilian sausage, sun-dried tomatoes and fresh basil is to die for and the sauce is so creamy.  The best part? Since it’s made with reduced fat coconut milk, it’s healthy too!

Ingredient Notes:

Chicken sicilian sausage: I purchase mine from Trader Joe’s and remove the sausage from the casing.  You could also use a pork sausage.

Gnocchi: I also purchase mine from TJ’s and I buy it in the pasta aisle.  It is packaged at room temperature.  Make sure you don’t use frozen gnocchi in this recipe, as it defrosts it will make the rest of the ingredients watery. 

Low sodium chicken broth: Whenever there is a choice to buy low-sodium anything, I do it.  I would rather add salt as needed or to my liking. 

Sun-dried tomatoes: I normally purchase the ones in oil and drain the oil before adding them to the pot, however Trader Joe’s just came out with Julienne Cut sun-dried tomatoes in a package that are dried, so those work great, too.

Lemon juice: Fresh is best!  I normally squeeze the juice into a small bowl before adding to the pot, this helps to prevent any hidden seeds sneaking into your meal!  If you are extra short on time, you can use pure lemon juice from concentrate

Fresh basil: It gives the dish so much flavor! No need to cut the leaves, simply tear them off and then rip them into smaller pieces and toss in.  Reserve some extra for topping!

How to make One-Pot Creamy & Spicy Gnocchi

As I mentioned above, this recipe could not be easier!  You start by removing the sausage from it’s casing (if necessary) and adding it to a pot with a little olive oil to prevent it from sticking to the bottom.  Break up the sausage as it cooks until brown which will take about 5 minutes. Add in the coconut milk, broth, sun-dried tomatoes and lemon juice to the pot.  Cover and bring to a boil, reduce heat to medium and cook for 5 min.  Yes – just 5 min! Gnocchi cooks very quickly. Remove the lid, stir and portion into bowls, top with basil and enjoy immediately.

Ingredients

1 lb chicken sicilian sausage
18 oz gnocchi
1 can reduced fat coconut milk
1/2 cup low sodium chicken broth
1/2 cup sun-dried tomatoes
2 tsp lemon juice
2 garlic cloves, chopped
1/2 cup chopped basil
1 tbsp olive oil

Instructions

  1. Pour olive oil into a large pot, turn burner onto medium heat
  2. Remove sausage from casing, place in pot.  Cook until brown (about 5-7 min), breaking up sausage as it cooks
  3. Add coconut milk, broth, gnocchi, garlic, sundried tomatoes and lemon juice to pot
  4. Bring to a boil and cook covered for 5 minutes
  5. Add basil to pot and stir
  6. Top with extra basil and serve
