These Pumpkin Spice Power Bites are a perfect on-the-go snack for the fall season. Old fashioned oats, shredded coconut, maple syrup and pumpkin puree. They’re packed with protein, healthy fats, antioxidants, vitamins and so much flavor.

Ingredient Notes and Health Benefits:
Old fashioned oats: High in fiber and antioxidants, oats are a great ingredient to add to any recipe.
Dark chocolate: I love dark chocolate because they are a little bit less sweet and also provide a bunch of health benefits because of the high % of cacao in comparison to milk chocolate! Cacao is high in antioxidants, minerals. It also may reduce the risk of heart disease, lower blood pressure and cholesterol and also contain anti-inflammatory properties.
Collagen Powder: Collagen is found in all of our connective tissues, ligaments, tendons, and bones. As we get older, our bodies produce less collagen, so this is a great supplement to add into the mix. It supports healthy skin, nails, joints and hair. I use Vital Proteins Collagen.
Pumpkin Pie Spice: A blend of cinnamon, ginger, allspice and nutmeg. It’s the perfect fall spice for baking.
Pumpkin Puree: High in vitamin A and C as well as antioxidants, this pumpkin puree not only adds a lot of flavor, but nutrient value, too. I buy the canned puree from Trader Joe’s.
How to Make Pumpkin Spice Power Balls
These power balls are the easiest to make! They require no cooking. Simply place all ingredients into a medium sized mixing bowl. Use a large spoon to mix and combine ingredients. Next, using a cookie scoop, portion out batter and roll into balls using your hands.




Storage of Pumpkin Spice Power Balls
If placed in an airtight container, these will store in the fridge for a week and in the freezer for up to 2 months.\
