Fresh udon noodles, savory asian chicken sausage, topped with colorful veggies and coated in a flavorful asian sauce. This recipe is on the table in 20 minutes. It’s made in one skillet, so the clean up is super easy. Perfect for a weeknight dinner.

Ingredient Notes and Health Benefits:
Asian Chicken Sausage: I bought mine from Trader Joe’s, and this sausage goes perfectly with the noodles and sauce in this recipe (pictured below). However, if you don’t have access to a TJ’s, any chicken or pork sausage will work just fine.
Udon Noodles: I love cooking with Udon Noodles! The texture is great and they are so easy to cook – they’re ready in about 3 mins once added to the skillet.
Red Bell Peppers: High in vitamin C, B6 and folate. They also add great color to this stir fry and are so sweet and yummy!
Green Cabbage: A cruciferous veggie high in vitamin C, vitamin K, folate, manganese, magnesium, potassium, antioxidants, and fiber.
Hoisin Sauce: A popular sauce in asian cuisine, hoisin sauce is a thick dark sauce with a sweet and salty flavor. It can be found in the asian food aisle of regular grocery stores.
Low Sodium Soy Sauce: If you are gluten free, you can use coconut aminos instead.



How to Make Asian Udon Noodle Stir Fry
This recipe could not be easier! Using a knife, slice casing of sausage and remove meat. Place sausage into a medium-hot skillet for about 5 minutes, breaking up the sausage while it cooks. Next, slice the red bell peppers, chop garlic and ginger and add them to skillet. Stir to combine ingredients. Cook for 3 minutes. While you’re waiting for that to cook, place sauce ingredients in a small bowl and whisk together. Add cabbage to skillet and cook 1 minute. Pour sauce into skillet. Add noodles to skillet and use your hands to break them apart. Cook for 3 minutes. Using a serving spoon, place into large bowls. Top with sesame seeds and green onion.

3 cups shredded green cabbage
1 tbsp finely chopped fresh ginger
3 garlic cloves, finely chopped
2 green onion stalks, chopped

1/4 cup mirin
2 tbsp sesame oil
