Homemade Meatballs and Spaghetti

I don’t know about you but Spaghetti and Meatballs is just such a comfort food meal to me. The combination of lean ground beef and chicken Sicilian sausage in the meatballs, along with spices that you’ll already have in your kitchen, this recipe is easy to make and so flavorful.  The addition of tomato paste and egg make the meatballs stick together and allows for no bread crumbs.

Ingredient Notes:

Noodles: I love this recipe with brown rice and quinoa noodles.  Trader Joe’s has a great version that are spaghetti noodles. They are gluten free and I just find them easier to digest.

Extra lean ground beef: Since we are mixing this with the sausage, I think buying extra lean ground beef is best.  The leaner the beef, the healthier the meatballs

Chicken sicilian sausage: Using a sharp knife, I slice the casing and remove the sausage with my hands. I try to break up the sausage a bit with my hands as I do it

Tomato paste: The tomato paste helps to keep the meatballs together and gives it extra flavor, too

Arrabiata sauce: Has a little bit of a kick, if you are sensitive to spice, a marinara will work just fine

How to make Homemade Meatballs and Spaghetti

Meatballs are easy!  You place all the ingredients in a large bowl and using your hands (you could use a spoon but hands are so much easier) you mix all the ingredients together.  Depending how large you want the meatballs to be, grab a small handful, roll the mixture into a ball and place on a baking sheet.  I like to put a sheet of aluminum foil on the baking sheet to make clean up a little easier.  Once they have cooked in the oven for 25-35 minutes (depending how large your meatballs are), remove them from the oven.  They will still be a little “red” inside, this is because of the tomato paste, however you want to make sure the meat has been cooked through and looks brown, so just cut into one and take a close look :).  Place the meatballs in a large skillet with cooked noodles, arrabiata sauce and mix together.  Scoop into a bowl and top with fresh parsley as garnish.

Ingredients

Meatballs:
1 lb extra lean ground beef
1 lb chicken Sicilian sausage
1 egg, beaten
1 can tomato paste
1 onion, diced
2 tbsp parsley, chopped
1 tbsp italian seasoning
Sea salt
Pepper

Pasta and sauce:
16 oz brown rice and quinoa spaghetti
1 jar arrabiatta sauce

Instructions

  1. Preheat oven to 350
  2. Combine all meatball ingredients in a large bowl
  3. Mix and roll into balls
  4. Place on a baking sheet and bake in oven for 25-35 minutes (depending how large you make your meatballs)
  5. In a medium sized pot, cook pasta according to package directions
  6. When meatballs are done, place pasta, meatballs and sauce in a skillet and warm for 5 minutes
  7. Top with extra parsley and serve
