This Stir Fry tastes like it’s from a Japanese restaurant but can be ready at home in under 20 minutes. High in lean protein, healthy carbs, colorful veggies and smothered in a delicious 4 ingredient sauce.

Ingredient Notes and Health Benefits:
Ground Turkey: A great source of lean protein, I prefer to buy organic whenever possible.
Udon Noodles: Found in the asian food aisle of your grocery store, Udon noodles cook in under 5 minutes and have the most fluffy texture.
Bell Peppers: Full of antioxidants and vitamins, they have a high nutrient density and bring so much color to this recipe.
Sesame Oil: Likely found with the olive oil, it has a nutty taste and is perfect in this asian style stir fry.
Low Sodium Soy Sauce: tastes the same as the full salt version but is much healthier.
Hoisin Sauce: A thick sauce that has a sweet and salty flavor.



Storage and Reheating Instructions
Simply place the Udon Noodle Stir Fry in a glass or other microwave safe container and store in the fridge. It will stay fresh for 2-3 days. Prior to eating, place in the microwave on medium heat for 2-3 minutes. Top with toppings and enjoy!

2 lbs ground turkey 1. Place turkey in large skillet and cook until brown, breaking meat up as it cooks

3 red bell peppers, sliced
2 orange bell peppers, sliced
1 jalapeno pepper, chopped
2 tbsp fresh ginger, chopped
3 garlic cloves, chopped
1/2 cup fresh basil, ripped
Ground black pepper, to taste
Sauce:
1 cup low sodium soy sauce
1/2 cup rice vinegar
4 tbsp hoisin sauce
4 tbsp sesame oil
Toppings:
1/2 green onion stalk, chopped
Sesame seeds
