This Slow Cooker Creamy Tuscan Chicken is the perfect weeknight meal. Cooked for 3-4 hours on high or 7-8 on low, you can put the ingredients in the slow cooker before you leave for the day and it’s ready for you when you come home (and your house will smell heavenly!). Juicy chicken thighs, silky coconut milk, sun dried tomatoes and fresh basil, it’s packed with protein and flavor. It also reheats very well for meal prep.

Ingredient List and Health Benefits
Chicken Thighs: I buy boneless skinless chicken thighs because I love how tender and juicy they are in this recipe, but chicken breasts will work just fine as well.
Mini Gold Potatoes: Any potato will work well in this recipe. They are packed with antioxidants, vitamin c, vitamin B6, and potassium. A great source of carbohydrate.
Sun Dried Tomatoes: I buy the package of Julienne Cut sun-dried tomatoes from Trader Joe’s. You could also use the ones that are in oil and drain the oil, but I think the packaged ones are easier.
Fresh Basil: An anti-inflammatory, high in antioxidants, aids in digestion and helps balance the body’s pH levels.
Reduced fat coconut milk: This is what makes this recipe creamy, but keeps it both dairy free AND healthy. I prefer the reduced fat version, it keeps the calories lower and still has the same great creamy texture.
Extra Virgin Olive Oil: High in healthy (monounsaturated) fats, antioxidants, and anti-inflammatories.



How to Make Slow Cooker Creamy Tuscan Chicken
We will start by browning the chicken. Pour the olive oil into a skillet and heat to medium. Place chicken thighs in skillet and season with salt and pepper. Cook until brown (3-4 minutes). Flip chicken, season again and cook another 3-4 minutes. While the chicken is cooking, cut mini potatoes into 4’s and place in slow cooker. Next, add sundried tomatoes, broth, coconut milk, garlic, oregano, garlic powder to slow cooker, stir to combine ingredients. Place chicken into slow cooker and stir again. Cook on high for 3-4 hours. Turn slow cooker off, stir in spinach, basil and parmesan cheese (optional). Cover and cook for another 5 minutes. Top with extra basil and serve.
