Sprouted grain bread topped with smashed avocado, vegan pesto, smoked salmon, crumbled goat cheese and fresh lemon juice. As much as I love to cook, this item requires no cooking at all, and it’s kind of a nice change! It comes together in under 5 minutes and is perfect for breakfast, lunch or brunch.

Ingredient Notes and Health Benefits
Ezekiel Sprouted Grain Bread: How is sprouted grain bread different than wheat bread? It’s means the sprouts have been caught during the germinating process, meaning it will have a higher level of nutrients when compared to wheat bread. In addition to that, it also breaks down phyate, which normally decreases the number of vitamins and minerals available to be absorbed into the body. They also likely have a lower level of starch and are therefore easier to digest. Win!
Avocado: One of my favorite healthy fats, avocado is jam packed with nutrients. It’s high in vitamin K, vitamin C, potassium, fiber, folate, vitamin B5 and B6 and vitamin E. In this recipe, it’s just mixed with lime juice and salt and pepper to make a flavorful guacamole which is the perfect taco topping.
Kale, Cashew and Basil Pesto: I buy this vegan pesto from Trader Joe’s, however you can use any type of pesto.
Goat Cheese: I always say that if you put goat cheese on anything, it’s automatically way better. Does anyone else agree?!
Smoked Salmon: I am obsessed with smoked salmon. It requires no cooking, is so flavorful and SO easy.



How to Make Avocado Toast with Smoked Salmon and Pesto
This is the easiest recipe! Place 1 piece of ezekiel bread into the toaster and toast to desired level. While you wait for that, cut an avocado in half and scoop out the flesh using a spoon. Using a fork, mash the avocado. Add pesto to avocado and stir to mix. Place avocado and pesto on toast. Top with smoked salmon, crumbled goat cheese, fresh lemon juice and seasoning.
