Avocado Toast with Fresh Herbs, Crumbled Feta and Poached Egg

Whole wheat toast, smashed avocado, crumbled feta and fresh herbs. Topped with a perfectly poached egg and sprinkled with everything but the bagel seasoning. This recipe is easy to make, full of nutrients and ready in under 10 minutes.

Ingredient List and Health Benefits:

Whole Wheat Bread: I love to use Dave’s Killer bread, it has 5g of protein in each slice, which is much higher than other breads.

Avocado: An amazing source of healthy fat, vitamins and minerals.

Fresh Dill: Adds so much flavor to this recipe and is high in vitamin C, manganese and vitamin A, which helps to support your immune system. Win!

Fresh Basil: Also adds a lot of flavor to this recipe. Basil is high in vitamin K, manganese, iron and vitamins A and C.

Poached Egg: I love my eggs poached and in this recipe it’s the perfect contrast to the crispy toast.

How to Poach an Egg:

Bring water to boil in a small pot, then add vinegar. Adding vinegar helps to keep the egg white together. Using a spoon, swirl the water in a circle. Crack an egg into the middle of the moving water. Cook for 2-3 minutes, and then remove with a spoon. It couldn’t be easier!

Making the Avocado Mixture:

We’re essentially just throwing all the ingredients in a bowl and then mixing! Start with slicing the avocado. Using a spoon, scoop avocado into a bowl and mash with a fork. Add fresh garlic, dill, basil, feta and salt and then stir, that’s it!

Assembling the Avocado Toast:

Place toast on a plate and top with avocado mixture. Place poached egg on top and sprinkle with everything but the bagel seasoning. This is the easiest recipe, right?!

Ingredients

1 slice of dave's killer bread
1/2 avocado, smashed
fresh basil, chopped
fresh dill, chopped
1 tbsp crumbled feta
1 egg, poached
1/2 tsp everything but the bagel seasoning

Instructions

1. Bring water to a boil in a small pot, add vinegar
2. Swirl water with a spoon and crack egg into the moving water. Cook for 2-4 minutes. Using a large spoon, remove egg from water and set aside on a plate.
3. Slice avocado in half, and scoop out avocado and place into a bowl. Mash with a fork.
4. Add chopped garlic, basil, dill and crumbled feta. Stir.
5. Place bread into toaster and toast to desired level.
6. Spread avocado onto toast, top with egg and seasoning.
