Herbed Goat Cheese, Sweet Potato and Egg Make Ahead Breakfast Burrito

Full of fluffy eggs, creamy herbed goat cheese and roasted sweet potatoes, these burritos are the perfect breakfast. The best part? You can make a large batch in advance and store them in the freezer. In the morning, place the burrito in the microwave and you have breakfast ready in 3 minutes.

Ingredient Notes and Health Benefits:

Eggs: I always buy organic eggs.  They are the most flavorful and also the most healthy.

Soft shell tortillas: I also purchase mine from Trader Joe’s, and I prefer the Whole Wheat Tortillas.

Sweet Potato: High in fiber, vitamins, minerals and antioxidants.

Ground Turkey: A great source of lean protein.

Herbed Goat Cheese: One of my favorite cheese’s, the herbed version adds so much flavor to this burrito.

How to Make Herbed Goat Cheese, Sweet Potato and Egg Make Ahead Breakfast Burrito

1st Step: Preheat the oven to 425 degrees. Toss cubed sweet potatoes in coconut oil, place on baking sheet and bake in oven for 30 minutes.

2nd Step: Place ground turkey into a small skillet and cook thoroughly, breaking up meat as it cooks.

3rd Step: Crack eggs into a small bowl, whisk and pour into a skillet with 1 tbsp coconut oil. Cook in skillet for 5 minutes or until eggs are cooked to your liking.

4th Step: While the potatoes, eggs and turkey are cooking, chop the onion, red pepper and garlic.

5th Step: Place the eggs and ground turkey into a large mixing bowl when they are cooked.

6th Step: When the potatoes are done, remove them from the oven and pour into a large greased skillet with peppers, onion, garlic and rosemary. Cook for 5 minutes and then pour ingredients into the large mixing bowl.

7th Step: To assemble burritos, lay tortillas flat on a counter. Spread goat cheese onto tortillas. Using a large spoon, scoop other ingredients onto goat cheese. Roll up burrito. Top with pico de gallo, avocado and hot sauce.

Storing and Re-Heating the Burritos

Place burritos in the freezer. They will store well for 2 months. To prepare them after they’ve been frozen, remove the burrito from the foil, wrap in a paper towel and place in the microwave for 3-4 minutes on high or the toaster oven for 4-6 minutes.  I like to top them with fresh pico de gallo and avocado but you could also do hot sauce!

Ingredients

8 eggs
10 oz herbed goat cheese
1 lb ground turkey
2 sweet potatoes, cubed
1 yellow onion, chopped
2 red bell peppers, chopped
4 cloves of garlic, finely chopped
3 sprigs of rosemary
2 tbsp coconut oil
14 tortillas

Toppings:
Pico de gallo
Avocado
Hot sauce

Instructions

4. Crack eggs into a small bowl, whisk and pour into a skillet with 1 tbsp coconut oil. Cook in skillet for 5 minutes or until eggs are cooked to your liking.
5. While the potatoes, eggs and turkey are cooking, chop the onion, red pepper and garlic.

10. If you are storing the burritos, wrap them individually in aluminum foil and place in freezer.
11. To thaw the burrito, remove from foil, wrap in paper towel and place in the microwave for 2-3 minutes.
