There’s just something so comforting about a Saturday morning filled with a fresh cup of hot coffee and a yummy homemade breakfast. These Banana Dark Chocolate Chip Pancakes are ready in about 20 minutes and are so tasty. They are super flavorful, relatively healthy and the combination of banana, cinnamon and melted dark chocolate is to die for!

Ingredient Notes:
Whole wheat flour: I prefer using whole wheat flour for the added health benefits, however you can definitely use all-purpose flour here as well
Coconut milk: I love coconut milk as a dairy-free option. Almonds milk or regular cows milk will work just fine, too
Bananas: the riper, the better! As bananas ripen, they become sweeter (and they’re also easier to mash)

Dark chocolate chips: I love dark chocolate because they are a little bit less sweet and also provide a bunch of health benefits because of the high % of cacao in comparison to milk chocolate! Cacao is high in antioxidants, minerals. It also may reduce the risk of heart disease, lower blood pressure and cholesterol and also contain anti-inflammatory properties
Vanilla extract: I love the flavor vanilla adds to any recipe, I feel like you can never have too much! In this one I used 2 tsp, but feel free to only use 1 if you prefer less vanilla flavor
Maple syrup: make sure you’re using the real stuff – makes such a difference!

How to make Banana Dark Chocolate Chip Pancakes
This recipe really is so simple! Grab 3 mixing bowls (small, medium, large) using the large for dry ingredients, medium for wet ingredients and the small to mash the bananas. Combine all the ingredients in the large bowl, stir in the dark chocolate chips and you’re all set. Using a ladle or large spoon, place pancake mix into a hot greased skillet. You’ll know it’s time to flip the pancakes when small bubbles start to form. Once they are golden brown, remove them from the skillet and place them onto a plate. Top with extra banana slices, dark chocolate chips and drizzle maple syrup on top. Mmmm mmm mm! What a perfect Saturday breakfast treat!
