Spicy Sausage Egg and Potato Breakfast Burrito

Don’t have time to prepare breakfast in the morning for you and your family? These made-ahead breakfast burritos are a life saver!  You prep everything ahead of time so all you have to do is put them in the microwave or toaster oven and they’re ready by the time your coffee is ready.  Eating breakfast and fueling yourself for the day ahead is so important.  These breakfast burritos help you do just that!  Even if you aren’t rushing off to somewhere, preparing these in advance can save you so much time each day and who doesn’t love that?!

Ingredient Notes:

Eggs: I always buy organic eggs.  They are the most flavorful and also the most healthy.

Chicken sicilian sausage: I purchase mine from Trader Joe’s, the ones that are in the casing. You could also use ground turkey instead.

Jalapenos: These are definitely optional as they make the burrito quite a bit more spicy.  I finely dice the pepper so that it adds flavor but the spice isn’t over powering.

Soft shell tortillas: I also purchase mine from Trader Joe’s.  The large flour tortillas are great because they roll really easily

How to make Spicy Sausage and Egg Potato Burrito

Crack 12 eggs into a large bowl and whisk together.  Pour into a hot greased skillet and cook for about 5 minutes, using a spatula to scramble the eggs as they cook.  Poke the potatoes with a fork a few times each, and then place them in a microwave and cook for 5-7 minutes on high.  Remove them from the microwave, dice them into bite-sized pieces and place in a large mixing bowl.  Drizzle with olive oil, sprinkle with italian seasoning and mix to evenly coat the potatoes.  Place in a skillet and cook over medium heat until the potatoes are brown and a little crispy, about 5 minutes. While the potatoes are cooking, dice the red peppers and jalapenos.  Place all ingredients in a large bowl and mix.  Scoop onto the middle of the soft shell tortillas.  Roll the tortilla over tightly and then cover in aluminum foil.  If you are planning on eating them in the next day or two, place in the fridge.  If not, place in the freezer and they will last for weeks!

Re-Heating the Burritos

Remove the burrito from the foil, wrap in a paper towel and place in the microwave for 3-4 minutes on high or the toaster oven for 4-6 minutes.  I like to top them with fresh pico de gallo and avocado but you could also do hot sauce!

Ingredients

12 eggs
1 tbsp olive oil
1 red pepper, diced
12 red potatoes, diced
2 jalapenos, diced
1 lb chicken sicilian sausage
6 soft shell tortillas
1 tbsp italian seasoning

Toppings:
Pico de gallo
Avocado, sliced
Shredded cheese (optional)

Instructions

  1. Remove sausage from casing and place in a greased skillet over medium heat, cook for 10 minutes, breaking up the sausage as it cooks
  2. Place eggs in a medium sized mixing bowl and whisk
  3. Pour eggs into a greased skillet over medium heat, cook for about 5 minutes until scrambled
  4. Place potatoes in microwave, cook for 5-7 min
  5. Place cooked, diced bite-size potatoes in a large mixing bowl, drizzle w olive oil and sprinkle with italian seasoning.
  6. Pour potatoes into another greased skillet over medium heat and cook for about 5 minutes, flipping often
  7. Dice the red pepper and jalapenos
  8. Combine all ingredients in a large mixing bowl
  9. Scoop into tortillas, roll and cover in aluminum foil
  10. Place in fridge or freezer
