Topped with a sweet and spicy mango salsa, this honey lime glazed salmon is broiled to create a flaky inside and crispy outside.

Ingredient Notes and Health Benefits
Salmon: A great source of lean protein, salmon is high in omega-3 fatty acids, an antioxidant (Astaxanthin) and B vitamins.
Ground flaxseed: This helps to thicken the glaze. Rather than use cornstarch (which is commonly used to thicken sauces, glazes, etc) I much prefer flaxseed. It is high in omega 3’s, fiber and lignans, which may help prevent cancer.
Soy sauce: I always purchase low sodium soy sauce. Coconut aminos will work well as a soy-free option.
Mango: Gives the salsa a yummy sweet taste and adds some great health benefits, too. Mangoes aid in digestion, are high in fiber and help promote a healthy gut, are high in Vitamin C and A.
Red bell peppers: High in vitamin C, B6 and folate. They add some extra sweetness to the mango salsa.
Avocado: One of my favorite healthy fats, avocados are high in monounsaturated fatty acids, fiber and potassium. Monounsaturated fats help reduce bad cholesterol and triglyceride levels.
Cauliflower rice: Brown rice or another grain could be used instead, but I love cauliflower rice as a healthy, quick and light option. I buy mine in the produce section of Trader Joe’s. If you don’t think you’ll use the whole package at once, there is also an option in the freezer section. Cauliflower is a cruciferous veggie that is high in B vitamins and fiber and contains antioxidants and phytonutrients that help protect against cancer.

How to Make Honey Glazed Salmon with Mango Salsa
To begin, let’s make the mango salsa. The longer the juices have to combine, the better the salsa will taste. Chop the mango, bell pepper, onion, avocado, jalapenos and cilantro and place in a mixing bowl. Drizzle with olive oil and lime juice, then stir and set aside. Turn the oven on to broil at 525 (or high) and let it heat up while we make the glaze. Place glaze ingredients (except ground flaxseed) in a mixing bowl and whisk. Place flaxseed and water in a small bowl and stir until all water is absorbed. Set aside. Place salmon filets on aluminum foil on a baking sheet and season with salt and pepper. Pour glaze ingredients into a skillet and cook over medium heat for about 5 minutes, stirring often so it doesn’t burn. Once glaze has started to bubble, add flaxseed and water and mix. Cook another 2 minutes until glaze has thickened. Brush glaze onto salmon, trying to spread it as evenly as possible.



Place in oven for 6-8 minutes depending how well done you like your salmon. 6 minutes will cook to medium. While salmon is in the oven, place cauliflower rice in a clean skillet with 1 tbsp of olive oil. Cook for 2-3 minutes until warm. Remove salmon from oven, place on cauliflower rice and top with mango salsa.
