Avocado Toast with Eggs

The perfect Saturday morning breakfast. Brown rice toast, smashed avocado, fresh lemon juice & eggs cooked to your preference.

Ingredient Notes and Health Benefits:

Avocado: One of my favorite healthy fats, avocado is jam packed with nutrients. It’s high in vitamin K, vitamin C, potassium, fiber, folate, vitamin B5 and B6 and vitamin E.

Eggs: I buy organic, free range eggs.

Brown Rice Bread: A great gluten free bread option. Any type of bread is fine.

Everything but the Bagel Seasoning: I buy this from Trader Joe’s and it’s the BEST.

How to Make Avocado Toast with Eggs:

This breakfast takes under 10 minutes to make! Cut into an avocado and scoop flesh out with a spoon. Smash with a fork and squeeze fresh lemon juice on top. Place 2 pieces of bread into a toaster or toaster oven. While the bread is toasting, crack 2 eggs into a hot skillet that’s been sprayed with coconut or olive oil. Cook to desired level. Spoon avocado on to toast, top with an egg on each piece and sprinkle seasoning on top.

Ingredients

2 eggs, cooked to your preference
2 pieces of brown rice bread
1 avocado, smashed
Fresh squeezed lemon juice
1 tsp Everything but the Bagel Seasoning

Instructions

  1. Cut into an avocado and scoop flesh out with a spoon.
  2. Smash with a fork and squeeze fresh lemon juice on top.
  3. Place 2 pieces of bread into a toaster or toaster oven.
  4. While the bread is toasting, crack 2 eggs into a hot skillet that's been sprayed with coconut or olive oil.
  5. Cook eggs to desired level.
  6. Spoon avocado on to toast, top with an egg on each piece and sprinkle seasoning on top.
